Black beans and buckwheat have been two of the staples of Mexican cuisine for thousands of years, and we can fully understand why. Buckwheat has a roasted, nutty flavor and black beans have a wonderful texture that complements it perfectly. As an added benefit, buckwheat is actually a pseudo-grain, so it is gluten-free.
